Sweet and spicy Kabobs


I took 2 skinless chicken breasts and pounded them down to about 1/2" thick. Then I cut them into 1" pieces. I also took 10-12 large shrimp(deveined and shells off).
Place the proteins in a large bowl and add a season all salt, lemon pepper and a touch of Cayenne pepper. Mix well.

In the meantime I cut up 5 mini peppers(or 1 1/2 large sweet peppers), 1/2 of red onion (all in 1" slices) and 1 pkg. of mushrooms.

Place the proteins as well as the vegetables in a large ziploc bag with 1/3 cup of pineapple juice(from a can), 1/4 cup of olive or grapeseed oil, 2 tablespoons of lime juice and red pepper to taste(as much as you like).
Mix well and place in the refrigerator for 2-4 hours.

Place on wooded skewers alternating veggies and meat. I put the chicken and shrimp on separate skewers due to the fact that the shrimp will cook faster than the chicken.
I than wrapped a few of the skewers with turkey bacon. 2 Slices per skewer and keep in place with toothpicks.
Then place on a hot grill for 15-20 min. turning ever 3-5 min. Take off of the grill and take the food off of the skewers and place on a plate.

Serve with your favorite sides and waaallllaaahhhhaaa! Happy eating y'all!

Tex mex burgers



I took Rachel Ray's Burger of the month recipe in her March issue and made it my own. And let me tell you...No matter if you make my version or hers.... It is DELICIOUS!!!!!!!!!!!!

I took 12 slices of turkey bacon.I put 8 of those slices and placed in a pre-heated 375 degree oven and cooked for 15-17 min. or until crispy.

In the meantime, I took 1 lb. of 98% lean ground beef. Diced up the other 4 pieces of turkey bacon, grated 1/2 of a Spanish onion, 2 teaspoons of minced garlic, 2 tablespoons of chipolte in adobo sauce,  2 teaspoons of Worcestershire sauce, and mixed together with my hands. Once mixed together I made the meat mixture into 4 burgers.
Place the burgers on the grill or an indoor panini press. Cook for about 5-7 min. per side.
Then I took buns and toasted.
Added some homemade salsa(you could use salsa from a jar)
then placed the burger.
then placed 2 slices of the turkey bacon
Then added queso(see below), onion, jalapenos,2 tortilla chips,  and cilantro...
OMG!!! What a GREAT burger!!! For Rachel Ray's recipe see her burger of the month in her March 2012 issue.


For the queso:
Take a small log of Velveeta cheese and place in a crock pot. add 1 can of rotel and 1/2 log of cooked spicy sausage! Once melted... You have a great Queso!

Even more reason to move to turkey bacon and sausage. I have started buying turkey bacon and I love it! If you place the bacon on a cooling rack, place on a baking sheet and cook for 15-20 min.(until crispy), you really can't taste the difference. Happy eating y'all

a take on one of Rachel Ray's burger's of the month OMG!!!








Ok.. So, Rachel Ray posted an AMAZING recipe in her August issue of her magazine. I have been dying to try it. So, what I do is take the basics and change it up just a bit. So, this is what I did(I did not think the hubby would like it.. well he didn't.. he LOVED IT)!

I took 1 pkg of 97% lean beef. I mixed my favorite seasonings, minced garlic(or you could do onion..This is to make the meat moist since it is so lean), and 1 tblsp. of Worcestershire sauce. mix well with your hands and make into 4 patties. Then I grilled the patties and 1 pablano pepper. when the pepper is done, I took off the grill and let cool. Once the patties were almost done, I made an egg over medium on a skillet and took 2 pieces of 100% whole grain(pepperidge farm)bread and added I can't believe it's not butter to one side of each piece. (Oh i forgot.. while the burgers are on the grill, I took turkey bacon, placed on a cooling rack over a baking sheet and baked on 375 until crispy). I then cut the bread down to size to fit the burger(they are large pieces). i added the pepper, the burger, the egg, the bacon,your fav. cheese,  and the other piece of bread(butter side out), and placed on my panini press(or a skillet). Just like a grilled cheese. cook until the bread is crispy and waaalllaaahhh! YUMMYYYYYYYYY!!!!!!!!!!!!!! Thanks Rach! Happy eating y'all!

Non-fried chicken and green beans w/bacon and potatoes!

I made this dinner from a complete nod from Paula Deen and her son Bobby. I made my own twists to the recipes but... I really followed the main ingredients.
For the green beans and potatoes....

this is a real easy recipe and pretty healthy. I bought about a pound to a pound and a half of fresh green beans. Snap off the ends and then again in half and toss in the pot(after rinsing) Dice up 1/2 of a sweet, yellow onion, about 4 pre-cooked bacon slices(the pre cooked is so much easier BUT you can throw in 2 slices of uncooked bacon(i used turkey bacon this time). It will have more grease in it but the flavor is really good) and cut 3-5 red potatoes into quarters. Throw all of that in there with a can of chicken stock.cover and cook on med. heat until all is tender. About 20-30 min. Add a pinch of salt and pepper for flavor and then a palm full (about 1 tablespoon) of dried oregano or dried Italian seasoning (you can get that Italian seasoning at walmart for .50 right now)!

For the non fried chicken.



I took 8 skinless, boneless chicken thighs. I seasoned them to my liking. In a separate bowl I mixed1/4 cup of fat free miracle whip, the zest and juice of 1/2 lemon, 1 egg white and hot sauce as desired(optional).then I took a bowl of Kellogg's brand corn flake crumbs mixed with panko bread crumbs. Dredged the chicken in the wet mixture than into the bread crumbs. I placed the thighs on a cooling rack over a baking sheet and baked on 375 degrees for 40-45 min.

Serve with honey Mustard or Ranch and waaaalllaaahhhh.. yummy, healthy meal! Thank you Deen Family!
