Chicken Hoagies with a cabbage slaw


This is a very easy recipe with a whole lot of flavor!!!

I took 2 chicken breasts and marinated on a plate with about a teaspoon of rice vinegar, spicy mustard and lime juice. Make sure that both sides have the liquid on them. Then evenly sprinkle some season salt, garlic salt and ground pepper over both sides of the chicken breast as well. Allow to marinate for 15-30 min. Then cook the chicken on a grill, panini press or skillet. I prefer grilled. Allow to cook until the chicken breasts is 165 degrees. About 8-10 min. per side. (depending on how hot your grill is)
While your chicken is cooking chop up 1/4-1/2 of a head of red and white cabbage, a red bell pepper, 1/2 sweet onion and 1 tomatillo(or tomato), place in a large bowl and mix with some minced garlic, salt, pepper, feta cheese,  and a light caesar dressing(like Ken's).
Mix well
Toast the hoagie rolls in the oven until crisp. Then add either mustard or mayo to the bun. I like mustard and my husband likes mayo. They both worked out well. Then add a slice of your favorite cheese. I used swiss, but a sharp cheddar would be amazing as well! Slice your chicken breasts into strips and place on top of the cheese. then add that amazing slaw... And wallllaaaaahhhhh!!! Happy eating y'all!

Chicken, bacon and spinach paninis


I took 2 chicken breasts and pounded them out with a mallet.
I then marinated them a buffalo wing sauce for 30 min. and seasoned with my fav. seasonings.
I warmed up an iron skillet with a dash of grape seed oil. Once hot I place both of the chicken breasts and cooked until done. About 8-10 min. per side.
While that is cooking take 2 handfuls of spinach from the bag(in the salad section), 1 tsp. minced garlic and 3 slices of pre-cooked bacon(cut up), 1 Roma tomato diced,  and place in a skillet until the spinach withers(about 5 min.) and set aside.

Take 2 slices of sourdough(per sandwich) spray with I Can't believe it's not butter spray on one side of each slice. Place butter side down on a pani press(or skillet), top with the chicken, spinach mix and your favorite slice of cheese.
I made some homemade cream spinach to go along with the panini and wallllaaahhh! Happy eating y'all!

Tequila Chicken

In my opinion this is the BEST recipe!!! AND, I got it from one of my favorite chefs... Guy Fieri! Like I always do... I twist a great recipe to be my own.
If you buy a cooked rotisserie chicken then this recipe is very easy. Being the Texas girl that I am. I like to smoke mine myself. I inject the bird with seasoning and Dr. Pepper. But, that is another recipe. lol

Take a cooked rotisserie chicken, peel the skin off and shred the meat. I just peel it apart with my hands and then run a knife through the meat on a cutting board. Then take 2 layers of foil and peel the edges together(about 15 inches long) so no liquid can get through and create a makeshift dish.. see below..
Once the foil is prepared take a 1/4 cup of oil and distribute over the foil "dish". I used grape seed but you can use olive as well. Then add a mixture of veggies. I used 1 onion(I usually use red in this recipe, but I was out), 1 sweet pepper(red, yellow or orange), 2 jalapenos, and 2 tablespoons minced garlic.
Then top with your shredded chicken
Once the chicken is on then add 3 oz. of your favorite Tequila. I used Tabasco tequila. then 3 oz. of lime juice(or the juice of 2 limes).Dice up some cilantro( I love cilantro so I used about 1/4 cup) and add 1 1/4 cup of your favorite shredded cheese....
Take 2 more layers of foil and close up all the sides(to be sure no liquids will fall out). Place in a 250 degree oven for 10 min. on each side and then you can make tacos, sandwiches, or just eat it by itself.

A (not so) normal chicken sandwich

Normally this is not something that I would post. It is just a chicken sandwich with bacon, cheese. onion, lettuce and mayo on a french onion roll. NO BIG DEAL!!! Well, the reason that I am posting this is not because of the sandwich. It is how I cooked the chicken(and it was kinda a fluke)!
It was a little chilly out tonight and I did not really feel like lighting the grill for just two chicken breasts. So, I marinated my chicken in some bbq sauce(y'all from Texas, I used Rudy's), and some Franks red hot sauce. Then added my fav. seasonings. Here is where my (as oprah would say) ahhh haaa moment came in. I have a panini press. Really it is a cast iron skillet that can be used as a panini press or an indoor grill. when you cook on this panini press it can get very hard to clean due to the grooves. So.. it needs to be well oiled. Well..................... I used GRAPE SEED OIL!!!!!!!!!!!!! Let me tell you something..... for any type of white meat i.e fish, turkey, chicken, duck... use grape seed oil when pan searing!!! It is healthy and is sooooo very flavorful!!!!!!!!!!!
