Tex mex burgers



I took Rachel Ray's Burger of the month recipe in her March issue and made it my own. And let me tell you...No matter if you make my version or hers.... It is DELICIOUS!!!!!!!!!!!!

I took 12 slices of turkey bacon.I put 8 of those slices and placed in a pre-heated 375 degree oven and cooked for 15-17 min. or until crispy.

In the meantime, I took 1 lb. of 98% lean ground beef. Diced up the other 4 pieces of turkey bacon, grated 1/2 of a Spanish onion, 2 teaspoons of minced garlic, 2 tablespoons of chipolte in adobo sauce,  2 teaspoons of Worcestershire sauce, and mixed together with my hands. Once mixed together I made the meat mixture into 4 burgers.
Place the burgers on the grill or an indoor panini press. Cook for about 5-7 min. per side.
Then I took buns and toasted.
Added some homemade salsa(you could use salsa from a jar)
then placed the burger.
then placed 2 slices of the turkey bacon
Then added queso(see below), onion, jalapenos,2 tortilla chips,  and cilantro...
OMG!!! What a GREAT burger!!! For Rachel Ray's recipe see her burger of the month in her March 2012 issue.


For the queso:
Take a small log of Velveeta cheese and place in a crock pot. add 1 can of rotel and 1/2 log of cooked spicy sausage! Once melted... You have a great Queso!

An easy weeknight pizza





I absolutely LOVE this recipe! I love it for quite a few reasons
1. It is quick! By the time the delivery boy gets to your house, you have already had dinner!
2. It is healthier than ordering in
3. you add your own ingredients so this can be as healthy as you want it to be(or not lol)
4. It is soooooo easy!
So, here is what you do...
You take Pillsbury pizza dough. It comes in those little tubes just like all of their bread. Roll it out on to some parchment paper (parchment paper allows for easy removal and you don't need to add cooking spray)
Pre-heat the oven to 425 degrees. Once I layed the dough out, I pinched the corners to give it some height as well and a definitive end crust. Then I took a jar of Prego pizza sauce and spread over the dough(leaving a few inches on all sides.
Since this is a jar sauce, I added some dried oregano to the top of the sauce. Then add some shredded mozzarella cheese(as little or as much as you would like).
Then add your ingredients. I added chicken(I used a large can drained. It is by the canned tuna in grocery store. Sometimes I will saute up some chicken breast, but I was going this quick! And it was done in less than 20 min.), jalapenos, mushrooms, feta, minced garlic, some fresh spinach and sliced campari tomatoes.
Then I topped with some more mozzarella and popped in the oven for 10-13 min.(or until the crust is browned).
And waalllaaahhhhh! You have a custom pizza for much cheaper and much healthier than take-out! For all of these toppings, a pizza place would charge you a whole lot! Plus, you can control the quality of your toppings! That is what is great about cooking, you know your ingredients. And, if you have kids, this is a great dish to get them involved in! A yummy weekend omelet

I took 1/4 of an onion(diced)
1 small sweet pepper(diced)
1/4 bag of fresh baby spinach
cook on a skillet until the the onions are clear and the spinach is almost withered. Then add some diced tomatoes or sun dried tomatoes and add a little salt and pepper.
add 3 beaten eggs, add some shredded cheese on the top and let cook for about 4 min.(I use a small pan. this way you don't worry about your eggs taking a run on you!)!  Take a spatula and flip 1/2 of the egg mixture over on the other 1/2. Cook for another 4 min. and then flip the whole egg. Once again, cook for another 4 min. then serve on a plate. I added some jalapenos and Feta cheese. Served with a Mexican potato hash and waaaalllllaaahhhh! happy weekend breakfast eating y'all!
