Beef stew with a twist.
I took 1 lb. of cut beef sirloin and placed in a large ziplock bag. I then added enough flower to coat the beef(about 1/3 cup) and shook the bag until the flower was coated evenly along with my favorite seasonings.
Then took the meat and placed in a dutch oven(or use a large skillet) that had 2 tblsp.s of oil(I use grapeseed) and mixed until browned.
while the meat was browning I cut up 1 russet potato, 1 sweet pepper(green, red or yellow), 1 onion, 3 carrots, 2 jalepenos(optional) and 2 stalks of celery.
Once the meat was browned I added the veggies, 1 (10oz.) can of tomatoes, 1/4 can of beef broth, 2 cups of water and 1 pkg. of McCormicks seasoning... see below.
Once the potatoes were about done(about 30-4 min). I added an 8 oz. can of mushrooms and 2 tablespoons of garlic. I placed some steamed rice on a plate and topped with the stew, some fresh parsley and a little bit of parmesean cheese and a slice of garlic bread. . And Walllaaahhhh! Happy eating y'all!

A healthier version of a calzone that can feed the whole family.
I absolutly love this dish! Not only does it fill you up... you really feel like your induldging with half the guilt!
I took a pkg. of 97% lean ground beef(you could use ground turkey as well) and mixed in a pkg. of seasoning(just to make it quick.. you can add whatever seasoning that you desire)
After mixing the meat and seasoning, I cut up 1 pkg. of fresh mushrooms and diced 1 red onion. i combined all of the ingredients in a large skillet and cooked on med. heat until the meat was browned. I then took one (single serving) tub of plain greek yogart(instead of sour cream), added oregano, minced garlic and some red pepper flakes(optional). Once I mixed all of that in a bowl, I took a can of prepared pizza dough(pillsbury) and rolled it out on parchment paper that I placed on a baking sheet. Spread the greek yogart mixture over the crust leaving about 2 inches on all sides. Then spoon the beef mixture over the top. add whatever cheese that you desire. This time I used shredded Gouda, but sometimes I just add a little bit of feta or blue cheese. Like I said, whatever cheese tickles your fancy that night. Then, fold up the edges of the crust over the filling. take the white of one egg and mix in a bowl and then place the wash over the top of the dough(this will give the dough a beautiful golden color), sprinkle with some Parmesan cheese and bake in a 425 degree oven for 15-18 min. or until the crust is golden. slide onto a wire rack when done and let cool for 5 min. before slicing. And waaallllahhhhh! happy eating y'all!
FYI... One serving is less than 300 calories!!!!!! Take that Pizza hut!!!!!!! lol! Thursday, January 12, 2012
Who loves P.F Changs??!! I do!! Check this recipe out!
Living in a military town, I don't get to go to P.F Chang's as much as I would like. It is about an hour away. So, when I found this recipe... I was soooo excited! I have posted a copy of their lettuce wrap recipe b4(and will again). This is their Mongolian Beef and garlic noodles!!!! I KNOW!!!!!!!! YUMMY!
I have to say that these are not my recipes. they are from Ron Douglas. I changed a few things here and there, but I will post the recipe as written...
Mongolian beef:
sauce
2 teaspoons of vegetable oil
1/2 teaspoon minced peeled fresh ginger
1 tablespoon chopped garlic
3/4 packed dark brown sugar
1/2 cup soy sauce
1 lb. flank steak
1/4 cup of cornstarch
1 cup vegetable oil
2 large green onions sliced
do ahead: To make the sauce, heat the 2 teaspoons veg. oil in a med. saucepan and saute the ginger and garlic, stirring constantly. Do not let the garlic burn. Add the brown sugar, soy sauce and 1/2 cup of water. Dissolve the brown sugar by whisking vigorously. Bring the mixture to a boil and let the sauce thicken, then set it aside until ready to use. Slice the flank steak into 1/4" thick pieces. coat each piece lightly in the cornstarch and refrigerate for 10 min. Heat 1 cup veg. oil in a wok or large skillet. add the beef, working in batches, and fry until each piece is slightly golden brown. Remove to paper towels and let drain. Heat the wok oer med. heat and return all the meat to stir-fry for 1 min. add the sauce and simmer for 1 min. then add the green onions.Stir fry for another min. then transfer to a serving platter.
