Sweet and spicy Kabobs


I took 2 skinless chicken breasts and pounded them down to about 1/2" thick. Then I cut them into 1" pieces. I also took 10-12 large shrimp(deveined and shells off).
Place the proteins in a large bowl and add a season all salt, lemon pepper and a touch of Cayenne pepper. Mix well.

In the meantime I cut up 5 mini peppers(or 1 1/2 large sweet peppers), 1/2 of red onion (all in 1" slices) and 1 pkg. of mushrooms.

Place the proteins as well as the vegetables in a large ziploc bag with 1/3 cup of pineapple juice(from a can), 1/4 cup of olive or grapeseed oil, 2 tablespoons of lime juice and red pepper to taste(as much as you like).
Mix well and place in the refrigerator for 2-4 hours.

Place on wooded skewers alternating veggies and meat. I put the chicken and shrimp on separate skewers due to the fact that the shrimp will cook faster than the chicken.
I than wrapped a few of the skewers with turkey bacon. 2 Slices per skewer and keep in place with toothpicks.
Then place on a hot grill for 15-20 min. turning ever 3-5 min. Take off of the grill and take the food off of the skewers and place on a plate.

Serve with your favorite sides and waaallllaaahhhhaaa! Happy eating y'all!

Chicken, bacon and spinach paninis


I took 2 chicken breasts and pounded them out with a mallet.
I then marinated them a buffalo wing sauce for 30 min. and seasoned with my fav. seasonings.
I warmed up an iron skillet with a dash of grape seed oil. Once hot I place both of the chicken breasts and cooked until done. About 8-10 min. per side.
While that is cooking take 2 handfuls of spinach from the bag(in the salad section), 1 tsp. minced garlic and 3 slices of pre-cooked bacon(cut up), 1 Roma tomato diced,  and place in a skillet until the spinach withers(about 5 min.) and set aside.

Take 2 slices of sourdough(per sandwich) spray with I Can't believe it's not butter spray on one side of each slice. Place butter side down on a pani press(or skillet), top with the chicken, spinach mix and your favorite slice of cheese.
I made some homemade cream spinach to go along with the panini and wallllaaahhh! Happy eating y'all!

Even more reason to move to turkey bacon and sausage. I have started buying turkey bacon and I love it! If you place the bacon on a cooling rack, place on a baking sheet and cook for 15-20 min.(until crispy), you really can't taste the difference. Happy eating y'all

Non-fried chicken and green beans w/bacon and potatoes!

I made this dinner from a complete nod from Paula Deen and her son Bobby. I made my own twists to the recipes but... I really followed the main ingredients.
For the green beans and potatoes....

this is a real easy recipe and pretty healthy. I bought about a pound to a pound and a half of fresh green beans. Snap off the ends and then again in half and toss in the pot(after rinsing) Dice up 1/2 of a sweet, yellow onion, about 4 pre-cooked bacon slices(the pre cooked is so much easier BUT you can throw in 2 slices of uncooked bacon(i used turkey bacon this time). It will have more grease in it but the flavor is really good) and cut 3-5 red potatoes into quarters. Throw all of that in there with a can of chicken stock.cover and cook on med. heat until all is tender. About 20-30 min. Add a pinch of salt and pepper for flavor and then a palm full (about 1 tablespoon) of dried oregano or dried Italian seasoning (you can get that Italian seasoning at walmart for .50 right now)!

For the non fried chicken.



I took 8 skinless, boneless chicken thighs. I seasoned them to my liking. In a separate bowl I mixed1/4 cup of fat free miracle whip, the zest and juice of 1/2 lemon, 1 egg white and hot sauce as desired(optional).then I took a bowl of Kellogg's brand corn flake crumbs mixed with panko bread crumbs. Dredged the chicken in the wet mixture than into the bread crumbs. I placed the thighs on a cooling rack over a baking sheet and baked on 375 degrees for 40-45 min.

Serve with honey Mustard or Ranch and waaaalllaaahhhh.. yummy, healthy meal! Thank you Deen Family!

Outbacks alice springs chicken


1 cup Dijon mustard
1 cup honey
1 tsp. lime juice
4-6 boneless chicken breasts
1 pkg of mushrooms
2 tablespoons butter
salt and pepper to taste
8 slices of bacon,cooked
shredded cheese
Mix(preferably with an electric mixer) mustard, honey, lemon juice and 1 tbsp of olive oil. Pour 1/2 of the mixture over the chicken in a ziploc bag and place in the fridge for at least 2 hours(but you can marinate overnight). Chill the remaining marinate to serve with the chicken. Once you are ready to start cooking…Spray frying pan w/ cooking spray(I use a cast iron skillet or a cast iron panini press), sear chicken on both sides until cooked(about 8-10 min. Per side). In a separate pan… Melt the butter and saute the mushrooms until golden. Take the cooked chicken, place in an oven safe dish. top each chicken breast with 2 pieces of bacon across each breast, top with mushrooms and shredded cheese. Place in the oven on (low) broil until cheese is melted and golden and sprinkle with parsley!
