Southwestern frittata


I really just love recipes that are very versatile.  You can literally just take a basic recipe,look into your refrigerator, see what you have and throw something together. That is what I did with this frittata and it was AMAZING!!!!

I took 1/2 cup of a frozen potato mix, placed in an iron skillet(or something oven safe) and cook on med. heat until slightly browned.


I then added 1/4 diced onion
4 oz. mushrooms
2 jalapenos (optional)
a handful of fresh spinach and some type of meat.
I used leftover fajita meat from last nights dinner. I cooked that for about 5-7 min. Until the heat warms up all of the ingredients.




I then took 9 eggs and whisked them vigorously(like you would do for scrambled eggs), and add to the pan. Season with a pinch of salt and pepper.


Then add 1/2 cup of shredded cheese, 1/2 cup of feta cheese and 2 tablespoons of sun-dried tomatoes( not in oil. if in oil, rinse off).



Cook w/o stirring for about 5 min., or until the egg mixture is just about set but the top is still loose. Then place the pan in a pre-heated 350 degree oven for 20-25 min. (until the center is set). Remove from the oven, slice and serve

Feta, cucumber and spinach pita sandwiches



In a small bowl, I mixed 1 small tub of plain Greek yogurt, 1 tablespoon of minced garlic and 1/4 teaspoon of cayenne pepper.

Cover and chill while you make the rest of the recipe.

Then take one English hothouse cucumber, take off skin and chop into thin slices. Place in a large bowl and add 1/4 cup of sun-dried tomatoes(oil packed and drained), one green onion chopped, 1 tablespoon of red wine vinegar, 1 teaspoon of olive or grape seed oil and about 6 ounces of fresh baby spinach. Mix well. toss in salt and pepper to season and gently fold in about 2/3 cup of feta cheese.
Take your Pita bread and wrap in foil.
Place in a 350 degree oven for 8-10 min. until warm.
Take the pita bread and slice in half. place a spoonful of the yogurt mixture in each half then top with the salad mixture.
Recipe makes 4 full pita's or 8 halves.
This is a great lunch! It is only about 275 calories per whole pita!

A yummy weekend omelet

I took 1/4 of an onion(diced)
1 small sweet pepper(diced)
1/4 bag of fresh baby spinach
cook on a skillet until the the onions are clear and the spinach is almost withered. Then add some diced tomatoes or sun dried tomatoes and add a little salt and pepper.
add 3 beaten eggs, add some shredded cheese on the top and let cook for about 4 min.(I use a small pan. this way you don't worry about your eggs taking a run on you!)!  Take a spatula and flip 1/2 of the egg mixture over on the other 1/2. Cook for another 4 min. and then flip the whole egg. Once again, cook for another 4 min. then serve on a plate. I added some jalapenos and Feta cheese. Served with a Mexican potato hash and waaaalllllaaahhhh! happy weekend breakfast eating y'all!

Greek Chicken

I marinated 2 chicken breasts in light Caesar dressing(I used the brand Ken's), sprinkled with salt, pepper, oregano, and paprika. Let sit for 30 min.
I then took one large skillet and one cast iron skillet and placed on the oven. I will cook the spinach mixture in the skillet and the chicken in the cast iron skillet.
For the spinach..
I took 2 tablespoons of grape seed oil(or you could use olive oil) and added to the pan. I then added 1/2 diced onion and 3/4 bag of baby spinach. Once the spinach has withered a bit, I added 2 sliced of pre-cooked bacon(sliced), and two teaspoons of diced sun-dried tomatoes(If they are packed in oil, run them under hot water to get the oil off)., and 1 tablespoon of minced garlic. Continue to cook for 3-4 more min. and set the mixture aside.
For the chicken:
In the cast Iron skillet I added enough grape seed oil just to coat the pan and seared the chicken breast on each side for 4 min. All you want is to brown both sides.
Then set aside.
in a baking dish, add the chicken and top with the spinach mixture.
Then top with a little Feta cheese
In the same iron skillet I cooked the chicken in I added 2 palm fulls of panko bread crumbs(about 1/3 cup) and 1 tablespoon of minced garlic. Let cook for about 3 min. and then place that mixture over the Greek chicken.
Cook in a pre-heated oven of 425 degrees for 20 min. or until juices run clear.
Take out and serve with my "is it mashed potatoes or Cauliflower" recipe posted on 1/29/11

Chicken, bacon and spinach paninis


I took 2 chicken breasts and pounded them out with a mallet.
I then marinated them a buffalo wing sauce for 30 min. and seasoned with my fav. seasonings.
I warmed up an iron skillet with a dash of grape seed oil. Once hot I place both of the chicken breasts and cooked until done. About 8-10 min. per side.
While that is cooking take 2 handfuls of spinach from the bag(in the salad section), 1 tsp. minced garlic and 3 slices of pre-cooked bacon(cut up), 1 Roma tomato diced,  and place in a skillet until the spinach withers(about 5 min.) and set aside.

Take 2 slices of sourdough(per sandwich) spray with I Can't believe it's not butter spray on one side of each slice. Place butter side down on a pani press(or skillet), top with the chicken, spinach mix and your favorite slice of cheese.
I made some homemade cream spinach to go along with the panini and wallllaaahhh! Happy eating y'all!
