I will have to start off by saying that I am sorry about the picture quality lately. I have sent my camera back to Nikon to be serviced. So, I have been using my Iphone and Ipad! I hope to have my camera back in the next few days!
I made this last night and I must say..... YUMMY!!!!!!!
I started by taking a sourdough loaf and hollowed it out with a knife. I then cut those interior pieces into slices for dipping.
In a small saute pan I took 1 tablespoon of butter and 1/2 diced sweet onion. I sauteed until golden and set aside.
In a large pot or dutch oven I melted 1/4 cup of butter and then whisked in 1/4 cup of flour. Stirring constantly. After about 2 min. of whisking, I added 2 cups of both fat free 1/2 and 1/2 cream and chicken stock. Let simmer on low for 20 min.
I then added 2 heads of chopped broccoli florets and 1 julienned carrot(I used parsnip), and the onions. Cook over low heat for 20-25 min. Add salt, pepper and a dash of nutmeg for taste.
Then I added 3 cups of shredded cheese( I used 2 cups of sharp cheddar, 1 cup mozzarella) and 2 tablespoons of processed Velveeta. Once the cheese melts, add to the bread bowl and wwwwaaalllllaahhh! Happy eating y'all!

cheesy broccoli casserole
I took 2 heads of broccoli along with 1 med. (chopped) onion and steamed until tender. About 10 min. While the veggies were steaming, I took a can of 98% fat free cream of mushroom soup, 1 container of plain Greek yogurt and 1 pkg of shredded cheese and mixed in a large bowl. Once the broccoli and onions were done I added to the bowl and mixed well. I then placed in an oven safe 2 1/2 quart dish. I topped with panko bread crumbs and some Parmesan cheese.
Baked in a 425 degree oven for 13-15 min. or until bubbly.

broccoli and cheese soup
This recipe shows how easy it is to cook!
I took this packet...
Followed the instructions which are...
cut one head of broccoli into flowerets, combine this pkg. with 2 cups of milk and 2 tblspns of butter. bring to a boil over med. heat and stir frequently. then once it comes to a boil, place on low heat and simmer for 10 min. Keep stirring frequently.
Well, I added a cup of shredded cheddar cheese and a cup of shredded mozzarella cheese. Added some Parmesan. yum!
while I was stirring this. I took a round bread (Hawaiian sweet bread) cored out the center and placed in the oven on 325 for about 10 min.or until crispy.Take your soup, pour in the bread and waaalllahhhha!!! Serve with any dinner or at any party!

Bennigans broccoli bites
I took a 16 oz. box of frozen broccoli and de-thawed. I mixed that with a bag of shredded cheese, some chopped bacon bits( I used the pre-cooked bacon, microwaved and chopped. I used half the box), 3 tablespoons of minced onion(sweet), and 2 1/2 tablespoons of flour. Mix that all together and place in the refrigerator for an hour(if you are in a hurry.. freeze for 20 min.). Take 3 eggs and whisk in a bowl. In a separate bowl take a cup of Italian bread crumbs and 1/2 cup of panko bread crumbs and mix together. Take your broccoli mixture and form into balls with your hands, place in the egg wash, then bread crumbs, then into a deep fryer(or oil in a dutch oven). Fry for about 2 min.(or until they are golden), then take out and place on a paper lined plate to drain. Serve with honey mustard.
Bennigans honey mustard
3/4 cup of sour cream(I use greek yogurt)
1/3 cup of mayo
1/ cup of Dijon mustard
1/3 cup honey
1 tblsp. lime juice
Mix all ingredients until smooth and refrigerate
