How do you know a good egg.

So, I learned a little something from Paula Dean. Outside of the "best by"/"use by" date... I think this is hands down the best advice yet! There is what is called a pack date. it is a 3 digit number Jan. 1 being 001 and Dec. 31 being 365. Eggs are safe for use for 45 days after that date. So look at the packing date vs. the expiration date. expiration date is just the date that the store should sell the product by. Now a use by date, you should actually use the product by that date. I had no idea about the packing date with eggs though, so thank you Miss Paula Dean!
