Green Beans with red potatoes

this is a real easy recipe and pretty healthy. I bought about a pound to a pound and a half of fresh green beans. Snap off the ends and then again in half and toss in the pot(after rinsing) Dice up 1/2 of  a sweet, yellow onion, about 4 pre-cooked bacon slices(the pre cooked is so much easier BUT you can throw in 2 slices of uncooked bacon. It will have more grease in it but the flavor is really good) and cut 3-5 red potatoes into quarters. Throw all of that in there with a can of chicken stock.cover and cook on med. heat until all is tender. About 20-30 min.  Add a pinch of salt and pepper for flavor and then a palm full (about 1 tablespoon) of dried oregeno or dried italian seasoning (you can get that italian seasoning at walmart for .50 right now)!

The great thing about cooking is that it is not an exact science you can mix it up each and every time. remember the crab stuffed mushrooms that I made earlier this week????  Well, I kept the stems that I hollowed out of the mushrooms and waaaallllllaaa... I diced them up and put them in this dish!!!! Waste not, want not... Is that how that saying goes? haha well you get my drift(and the drift from this dish will make you a winner at Thanksgiving)!

This total dish Cost about 3.00 and it will serve 4 so a great side dish for a great price!

  4. Im not very Gluten-free knowledgable BUT.. tonight or tomorrow I will post a great chicken, cabbage, veggie soup and I believe that it just might be gluten-free! I need to follow you so I can get better well versed in this area. The only info. I get on the subject is from Elizabeth Hasselbeck on the view... lol, that sounds bad... :(

  5. Lol! Yeah...my son has been GF for years, I have been for one week! :) it has been interesting, to say the least. I've learned quite a lot this week alone.
