OK.... so, I posted this on FB prior to myblog. But.it is so healthy and so good that I have to share with the world. This is a chicken(after thanksgiving you can use turkey), veg., cabbage soup. I took a nod to a paula dean recipe and made it my own. I cut up 1/2 a head of cabbage, 1 zuchinni, 1 squash, 2 carrots (peeled and sliced),2 jalepenos(fresh, but you don't need to add if you don't like heat) and placed that in my dutch oven(but you can use any pot). With soup, I like to use boullion cubes vs. stock (it is your preference though). I place in 4 cups of water and 3 chicken boullion cubes to the veggies and I simmer until they all soften(about 30 min).
Well b4 I even started on the veggies, I smoked a whole chicken( this is how I like it b/c I love that smoked flavor of the chicken on the grill smoking for 2 hours over mesquite wood.... yummy! But, you can purchase a roasted chicken at the grocery store). Make sure that the chicken is cool, peel of the skin and shred the meat. If any of you are interested I can tell you how I smoke my chicken. Just an insight... I inject it with diet coke mixed with spices. Instead of a beer can chicken, I make a coke or dr. pepper can chicken(it gives a diff. dimension of flavor).
Back to the stoup (stew/soup...stoup).. when the veggies are starting to soften, add 2 can of your fav. diced tomatoes. Once all the veggies are soft and your tomatoes have marinated in the broth(about 5 min). add your shredded chicken, cook for about 7 more min. and waaaallllllaaaa!!!!!!!!!!!!!!! A very healthy, hearty meal that is great for any diet(unless you are a vegetarian.. but then... make it w/o the chicken he he).
Ohh.. a little hint( I tell you all the time I think each person should judge what spices they put into dishes unless it really is necessary for the dish to shine), But add a little cumin spice and OMG its like a healthy version of a chicken tortilla soup... Just a hint!!!

U R def. a woman after my own heart!!! i LOVE, LOVE, LOVE dill. as I say in my posts though.. unless it really is needed in a recipe, I will leave the spices up the cook.. dill is like cilantro... you either love it or hate it(and I love them both)!!!! I don't want anyone to feel that they would not like the recipe due to a spice. Like I said though... you are a woman after my own heart!!! LOL!Let me know if you make it and what you think.
