Feta, cucumber and spinach pita sandwiches



In a small bowl, I mixed 1 small tub of plain Greek yogurt, 1 tablespoon of minced garlic and 1/4 teaspoon of cayenne pepper.

Cover and chill while you make the rest of the recipe.

Then take one English hothouse cucumber, take off skin and chop into thin slices. Place in a large bowl and add 1/4 cup of sun-dried tomatoes(oil packed and drained), one green onion chopped, 1 tablespoon of red wine vinegar, 1 teaspoon of olive or grape seed oil and about 6 ounces of fresh baby spinach. Mix well. toss in salt and pepper to season and gently fold in about 2/3 cup of feta cheese.
Take your Pita bread and wrap in foil.
Place in a 350 degree oven for 8-10 min. until warm.
Take the pita bread and slice in half. place a spoonful of the yogurt mixture in each half then top with the salad mixture.
Recipe makes 4 full pita's or 8 halves.
This is a great lunch! It is only about 275 calories per whole pita!
